PAULA'S OATMEAL CAKE

Oven 350 degrees
9x13 pan or similar size lightly greased
INGREDIENTS:
1 1/2 C water, boiling
1 C quick oats
1/2 shortening, butter or margarine
1 1/2 C flour
2 eggs
1 tsp cinnamon
1 tsp soda
1/2 tsp salt
1 C brown sugar
1 C white sugar
Frosting
1 Cube butter or margarine
1/2 C milk
1 C coconut
1/2 C chopped nuts
1 tsp vanilla
DIRECTIONS:
Boil water - put quick oats in water and set aside while mixing other ingredients.
Creams sugars and shortening together. And eggs. Mix in dry ingredients and oatmeal.
Pour into pan and bake for 35-40 minutes.
Frosting:
Put butter, sugar, milk, vanilla in a non-Teflon pan. Cook over medium heat until it starts to
thicken. Take off heat, add coconut and nuts. Pour over cake while hot.
Notes:
If you use old fashioned oatmeal you need to actually cook the oatmeal. I use 1 1/2 C water and 2/3 cup oatmeal. Also can be halved. And if you use a Teflon pan the icing doesn't work.
