SALLYS WHEAT BREAD



This can be made with all whole wheat or a mix of plain unbleached white and whole wheat or just white.. if you don't want a lot of loaves.. just half the recipe!
You can mix in a large bowl or if you have a Bosch machine.. use it. This will be explained as using the Bosch..
Ingredients:

Combine in Bosch bowl with kneading hook...
6 cups warm water (not hot)
1/3 cup yeast
1/3 cup brewers yeast
2 Tbs. Lecithin
3/4 cup oil
1 cup honey
1 Tbs. Vitamin C powder
3 Tbs. calcium powder
1 cup wheat germ

Directions:

~ Let rise in Bosch until it doubles or comes top of bowl.
~ Add whatever wheat flour (or combination) until it pulls away from sides of Bosch... add slowly so that it will have time to absorb wet mixture. Don't add too much flour or the bread will be very heavy!! Beat on 3 for 5 minutes (hold down the lid if it want to come off)
~ Oil counter or big bowl and turn out.
~Knead a few times and let rise a while.. cover with kitchen towel.. or plastic wrap with room to rise. Let rise until doubled in warm area.
~ Oil bread pans (5 or 6 depending on size pan) and shape loaves and put in oiled pans.
~ Let rise, again, and bake at 350° for 30 minutes or until done.

I like to use this for our everyday bread, dinner rolls, soft bread sticks.. or whatever!! Very good if you add sauted onion pieces to some of the dough before you form rolls.

For this recipe you may use anywhere from 6 to 10+ cups of flour, depending on the flour and the humidity and all the other variables. Don't try to rush it as you mix the flour in. You will use less flour if you are using whole wheat.. and it's best if you grind it yourself right before use.

I have also made this without the lecithin and the vitamin C, only because I ran out.. but we like it better with everything in it!
