Breakfast Brick




INGREDIENTS:

1 1/2 dozen eggs, scrambled (whipped)
1 pound grated cheddar cheese
2 Tbs. minced onion
1 tsp. powdered mustard
2 cups diced bread (a rustic sourdough is really good but you will need more eggs depending on how dry the bread is... 1 to 2 extra)
1 to 2 cups diced ham or sausage

DIRECTIONS:

~ Scatter bread on bottom of 9x13 pan (sprayed with oil).
~ Scatter ham, onion and mustard powder.
~ Sprinkle 1/2 of the cheese.
~ Pour eggs over the top.
~ Cover and let stand in fridge over night.
~ Bake in the morning in preheated oven @ 350 for 45 minutes.
~ Remove from oven, sprinkle remaining cheese and bake 15 minutes more.
