TURKEY POT PIE



Ingredients:
1 15oz. pkg. pie crusts

filling:
1-3 C. Turkey, cubed
1/4 C. butter
1/3 C. flour
1/3 C. chopped onion
3/4 tsp. salt
1/3 tsp. pepper
1 1/2C. chicken broth
1/2 C. milk
2 C. mixed vegetables
1/4 C. turkey gravy (optional)


Directions:

1. Heat oven to 425 degrees. Place one pie crust in 9" pan.
2. In medium saucepan, melt butter over med. heat. Add onion; cook until tender; about 2 minutes. Stir in flour, salt and pepper. Cook stirring constantly, until mixture is bubbly, remove from heat. Stir in broth and milk. Heat to boiling stirring constantly. Boil and stir one minute. Stir in turkey and vegetables; remove from heat.
3. Spoon turkey filling over crust. Place second crust over filling; flute edge. Cut slits in several places.
4. Bake 425 degree oven for 35-40 minutes or until crust is golden brown.
